Peas Glorious Peas!

I love peas.

Especially frozen ones. No other vegetable freezes as well or is as delicious. I could eat them every day. I swear.

So when a NEW recipe for peas enters my repertoire I am even more excited than usual. This one is courtesy Jamie Oliver and was made with mint from my windowsill. That sounds snottier than it is. The mint is really the only one of my plants that is flourishing, but I think that was what made it extra special.

We ate this with fishcakes and onions. Yum yum.

Minty Mushy Peas

2 tablespoons olive oil
1 bunch spring onions, chopped (or finely chopped regular onion if you are too lazy to go the store at the last minute)
1 handful fresh mint, leaves picked (preferably from your own windowsill hee hee hee)
2 cups frozen peas
2 large knobs butter
S&P

Heat the oil in a pan and add the chopped onions, mint, and peas. Cover and leave for a few minutes to steam. Mash with a potato masher. Mash until it’s smooth but with lots of whole peas. This is mushy, not paste. Add the butter and season to taste.
